Back in the Kitchen

Now that Harvey is behind us, its time to get back into the kitchen.

This Sunday saw a range of ingredients, spices, and flavors.  Since Jane will be working from home for a bit, a flavorful Slow Cooker Thai Chicken soup will make for easy and hearty lunches this week.  This simple one pot dish is made with traditional Thai ingredients - green curry paste, coconut milk, fish sauce, peanut butter, and some Thai chilies added for heat.

After a few weeks of eating on the go, a traditional Sunday dinner was on the menu. An herb crusted roast beef with home-made gravy was the perfect main course for the start of football season on a Sunday with just a hint of fall in the air.

Even when working from home, breakfast is still the most important meal of the day, and these chai apple oatmeal cups will ensure each day starts right.  These are a mix of chai spices - cinnamon, nutmeg, allspice, and cardamom, fresh apples, rolled oats, and just a hit of sweetness with banana and maple syrup.  Add a dollop of peanut butter for a protein packed breakfast that will keep you full all morning.
